Hummus

Ingredients

1 28oz can chick peas
1/2 cup tahini
2 oz fresh lemon juice
3 cloves garlic
1 Tbsp cumin
1 tsp cayenne pepper
2 oz extra virgin olive oil
salt and pepper

Directions

1. Finely chop garlic. Place in food processor with lemon juice and olive oil.
2. Add chick peas, tahini and spices, and blend until smooth.
3. Season to taste. Top with olive oil and paprika.

Lentil Soup

Ingredients

1 bag lentils
2 onions
2 Tbsp olive oil
5 tomatoes
1 bag spinach
1 Tbsp cumin
1 Tbsp paprika
1 Tbsp chili powder
1 Tbsp granulated garlic
2 cups ditalini
salt, pepper


Directions

1. In a large pot, boil bag of lentils with 3 qts water for half an hour.
2. In a frying pan, saute onions in olive oil. Add spices and seasonings. Add diced tomatoes.
3. Add spiced onion-tomato mix to boiled lentils. When lentils have reached desired doneness, add ditalini and spinach and boil for 10 minutes.

Kale Soup

Ingredients

2 onions
3 cloves garlic
2 Tbsp olive oil
1 12oz can black beans
1 12oz can kidney beans
4 red potatoes
2 oz vegetable base
4 cups water
1 28oz can diced tomatoes or 5 plum tomatoes
2 large bunches kale
salt, pepper, cayenne pepper

Directions

1. Saute onion and garlic in olive oil.
2. Add diced tomatoes.
3. Add water, potatoes, canned beans, veggie base and seasonings.
4. Add bunches of kale and simmer for 30 minutes.

Minestrone

Ingredients

1 onion
3 cloves garlic
2 stalks celery
1 carrot
2 Tbsp olive oil
2 potatoes
6 tomatoes or 1 28 ounce can diced tomatoes
1 large bunch basil
4 oz fresh oregano
4 cups water
1 cup ditalini
1 cup wine
1 cup fresh green beans
2 zucchini
8 oz bag spinach
salt and pepper
red pepper flakes

Directions

1. Saute onion, celery and carrot in olive oil. Add garlic. Add tomatoes. Add wine.
2. Add water, basil, oregano, potatoes, zucchini, spinach and seasonings. Simmer for 30 minutes to an hour.
3. Add ditalini, or cook separetly and add to finished soup.

Black Bean Soup

Ingredients

2 28 ounce cans black beans
3 avocados
4 plum tomatoes
1 bunch cilantro
3/4 shaker of Mesquite seasoning
1 bunch green onions
2 limes
2 cups water
Salt and pepper to taste

Directions

1. Blend avocadoes, tomatoes and cilantro together with a little bit of water.
2. Place in a saucepot with 2 cups water and heat to a simmer.
3. Add beans, mesquite, salt and pepper. Simmer for 20 minutes.
4. Finely chop green onions and add to soup, squeeze lime, season to taste.

Pizza Dough

Ingredients

5 1/2 cups AP flour
1 1/2 cups warm water
1/3 cup 110 degree water
1 packet yeast
1 Tbsp olive oil
2 tsp salt
pinch sugar

Directions

1. Mix 5 cups flour with 2 tsp salt.
2. Mix 1/3 cup water with 1 packet yeast and sugar. After a few minutes, add the rest of the water and olive oil.
3. Add flour to mix, little by little, and knead until smooth. 
4. Let rest an hour and a half, greased with olive oil in a bowl.
5. Assemble pizza.

Cook at 440 degrees for 7 minutes, turn and cook until done.

Yield: 2 pizzas
