How to: Crepes

I make crepes pretty often for breakfast. They're fast, easy, and contain ingredients you'll probably always have on hand. They're also incredibly versatile, as you can fill them with pretty much anything.

Ingredients

1 cup flour
1/2 cup milk
3/4 cup water
1 egg
1/4 cup sugar
2 Tbsp butter
Pinch of salt
(Optional) grated zest of one orange
Butter for sautéing

Yield: 6 crepes

Directions

1. Combine flour, sugar, and salt. (Dry ingredients)
2. Add milk, water, eggs and butter. (Wet ingredients)
3. Whisk everything until smooth. Add zest if using (it really adds a nice, subtle flavor)
4. Heat a small sauté pan on medium. Coat the pan with butter. Add batter and swirl the pan until the batter is thinly spread across. If it doesn't spread easily, thin out with more water.
5. Cook on one side and flip.
